Philippe Tosques is general manager of Napa Rose, the award-winning restaurant at Disney’s Grand Californian Hotel & Spa at the Disneyland Resort in Anaheim, Calif. In this role, Tosques is responsible for managing the staff and operations at this prestigious venue, providing one of the finest dining experiences in all of Orange County.
Tosques is a French restaurateur with more than 25 years of restaurant management experience. Before joining the Disneyland Resort in 2010, he served as general manager for three years at Prime Steakhouse, a Jean-Georges Vongerichten restaurant, at the Bellagio Hotel in Las Vegas.
Early in his career, Tosques worked with a famous chef of nouvelle cuisine, Gaston Lenotre at Le Pavillion Elysée, near the Palais Royal in Paris. Later, heading to the south of France to Montpellier, he opened Le Jardin des Sens, a 3-star Michelin-rated restaurant with chefs Jacques and Laurent Pourcel.
Sights set abroad, Tosques moved to Chicago in 1989 and then to Los Angeles in 1991 with the Hotel Sofitel chain. He was then named General Manager of Everest in Chicago in 1995. Under his management, Everest received the AAA 5-Diamond award and the Mobil 5-Star rating, which at the time made Everest one of only 16 restaurants in the nation to hold such recognition. In 2003, he helped open the designer Burger Bar and the exciting Fleur de Lys restaurant in Las Vegas, earning critical acclaim as one of Bon Appetit‘s “50 Hottest Restaurants.” In 2007, Tosques earned the “Best Service” award by Las Vegas Life magazine.
Tosques holds a bachelor’s degree in hotel and restaurant management from Lycée d’Hotellerie et de Restauration located in a suburb of Paris, France.
